Ingredients:
  • 1.5 cups fresh pitted Medjool or regular dates, soaked in water
  • 1 cup raw almonds or raw almond meal
  • 1/4 cup raw cacao nibs
  • 1 tsp cinnamon
  • 20g chocolate plant-based protein powder
  • 2 tsp Maca powder [2]
  • 1/4 cup chia seeds
  • 1 tbsp cacao powder
  • 1/2 tsp vanilla bean paste
  • Nut milk as required
Method:
  1. Soak dates for 10 minutes in boiling water
  2. Mill raw almonds in a food processor (instructions for Thermi TM6) 5 seconds/speed 9 - set aside in a bowl
  3. Purée dates in a food processor - 5 seconds/speed 7, scrape down the sides with a spatula then purée again if needed for until it forms a thick paste (5 seconds/speed 7)
  4. Add cacao nibs, protein powder, Maca powder, chia seeds, cinnamon, vanilla paste and almond meal - 3 seconds/speed 7 and scrape down the sides of the bowl and repeat if needed until combined
  5. Add a dash of nut milk if the mixture is dry
  6. Roll teaspoonfuls of mixture into a ball and coat in desiccated coconut/cacao/LSA or crushed hemp seeds
  7. Refrigerate to set and enjoy in moderation
