Coconut Chicken Meatballs

A delicious, hearty meal that the whole family will enjoy. Serve with your favourite green vegetables and lashings of chopped coriander.

Coconut Chicken Meatballs are a delicious, hearty meal that the whole family will enjoy. Serve on a bed of brown rice or quinoa with your favourite green vegetables and lashings of chopped coriander.

Ingredients

Meatballs

  • 500 grams chicken breast mince
  • 1/2 cup shredded coconut
  • 1 cup coriander, chopped
  • 1 garlic clove, crushed
  • 1 tbsp olive oil
  • Salt to taste

Sauce

  • 1 onion, diced
  • 1 garlic clove, crushed
  • 1 tsp fresh ginger, crushed
  • 1 tbsp olive oil
  • 8 ripe tomatoes, diced; OR 2x 400ml cans of tomatoes
  • 2 tbsp tomato paste
  • 1 tbsp tamari
  • 1/2 tsp chilli powder (optional)
  • 1/2 tsp salt
  • 1/2 cup water

Method

Sauce:

Firstly, make the sauce. Dice the onion, crush the garlic and ginger and sauté on medium heat using olive oil.

Add the tomatoes, tomato paste, water, tamari, salt and chilli (if you're adding).

Let simmer for 15 mins, stirring every 5 mins. While the sauce is simmering you can start to make the meatballs.

Meatballs:

In a large bowl, add chicken mince, garlic, shredded coconut, coriander and salt.

Mix together with your hands or a fork. Use a teaspoon to form small meatballs.

Heat a large pan over medium heat with olive oil. Place the meatballs in the pan and brown each side, rolling them gently in the pan.

Repeat until all the meatballs are cooked.

Once the meatballs are cooked, pour the sauce all around the meatballs and garnish with fresh herbs.
